Ranch Cucumber-rice Salad

  • Prep Time: 10 Minutes (Total Time: 2 Hours 10 Minutes)
  • Serving Size: 4
  • 2 cups Cooked Brown Rice, Cooled
  • 1/2 cup KRAFT Light Cucumber Ranch Reduced Fat Dressing
  • 2 tablespoons Chopped Fresh Mint Leaves Or 1 Teaspoon Dried Mint Leaves
  • 2 medium Cucumbers, Chopped (about 4 Cups)
  • 10 Cherry Tomatoes, Quartered
  • TOSS rice with dressing and mint in medium bowl.

    ADD cucumbers and tomatoes; stir gently. Cover.

    REFRIGERATE at least 2 hours or until chilled.

    Make Ahead

    Rice can be cooked ahead of time. Store in tightly covered container in refrigerator up to 3 days. Toss with remaining ingredients just before serving.

    Serving Suggestion

    Serve with grilled or broiled chicken breasts or fish fillets.
