Ranch Cucumber-rice Salad
- Prep Time: 10 Minutes (Total Time: 2 Hours 10 Minutes)
- Serving Size: 4
- 2 cups Cooked Brown Rice, Cooled
- 1/2 cup KRAFT Light Cucumber Ranch Reduced Fat Dressing
- 2 tablespoons Chopped Fresh Mint Leaves Or 1 Teaspoon Dried Mint Leaves
- 2 medium Cucumbers, Chopped (about 4 Cups)
- 10 Cherry Tomatoes, Quartered
TOSS rice with dressing and mint in medium bowl.
ADD cucumbers and tomatoes; stir gently. Cover.
REFRIGERATE at least 2 hours or until chilled.

Rice can be cooked ahead of time. Store in tightly covered container in refrigerator up to 3 days. Toss with remaining ingredients just before serving.
Serve with grilled or broiled chicken breasts or fish fillets.
