Lemon Pepper Chicken Salad

  • 1/2 cup Walnut Pieces
  • 1/2 Small Red Onion, Sliced In Rings
  • 1 package Fresh Lemon Pepper Seasoned Boneless Chicken Breasts
  • Extra-virgin Olive Oil
  • 1 package Salad Mix
  • 1 (2 1/4-ounce) can Sliced Black Olives
  • 1 (4-ounce) package Chive Or Herb-flavored Goat Cheese, Crumbled
  • Balsamic Vinegar
  • Preheat grill. Brush onion and chicken with oil, and grill over medium direct heat. Place walnut pieces in a handmade aluminum foil plan measuring about 6 inches square, and set this on the grill. Cover and grill 5 minutes, or until walnuts are golden brown. Cover, and continue grilling onions and chicken until chicken is cooked through and a meat thermometer inserted in the thickest part of breast registers 170_ F. Slice warm chicken and serve on a bed of salad topped with walnuts, onion, olives and goat cheese. Drizzle lightly with vinegar and more oil.
